Angus cattle are medium-sized, muscular animals and primarily red or black in color. Angus is known for the high level of marbling in their meat. Much marbling keeps the meat moist for longer when cooking. Where there’s marbling, there’s tender, juicy, and flavorsome beef
Prime meat has the highest level of marbling over other quality grades. Marbling is a positive attribute that shows a higher level of flavor present in the cut of meat. Prime is the most desirable quality grade for beef. Only 2% of all beef graded by the USDA makes it to this superior category.
Duroc Pork boasts superior marbling to lend itself to a natural juicer, a more tender product. The Duroc breed’s genetics create a high-quality pork product with increased flavor. Duroc pork has a higher PH factor which means it has a darker color, more firmness, and increased tenderness. The Duroc pork line represents the top 2% of pork with superior color and freshness through improved PH and state-of-the-art harvest methods.
